Athlete Super Fuel


Happy Holidays to all. This will be my first post on a true hardcore athlete's fuel (ha, that is a joke). For dinner, we enjoyed 'Tempeh, Mushroom + Fennel Ragout', modified from Pasta For All Seasons by Robin Robertson (original recipe is over fusilli) over 'Mixed Green Pilaf' from the Millenium Cookbook. Holy crap, this dinner was so good and super nutritious. Quinoa, tomotoes, tempeh, carrots, long grain rice... Wicked good! Two lunches for work this week as well. Giddyup! Seriously though, I highly recommend this dinner. This is in my opinion as close as you can get to a super delicious and power packed meal. This dinner packs a punch in terms of fiber, whole grains, protein, and good fats. Lots of vitamins and other good for you nutrients as well. Although the pictures didn't come out that well, this was incredibly tasty.

What will this power fuel be helping me with tomorrow? 5:30-6:30AM lift weights (we'll see if this actually happens...), run 6 miles after work (50-51 min). Cha ching!

That IS super fuel :-) I love Robin Robertson's recipes. Her book Vegan Planet was the first vegan cookbook I had - it's awesome!

Ya, Vegan Planet is a sweet book. I bought that in the summer and we make stuff from it all the time. I bought my wife Veganomicon for Christmas and we're looking forward to making some delicious recipes from that too- all these blogs I read now are always raving about it!

Your tempeh dish looks delicoius! I can never seem to get tempeh to the right consistency.
